Kevin Sousa was born November 21, 1974 in McKees Rocks, Pennsylvania. Sousa worked at the Duquesne Club as senior saucier and roundsperson under Chef Keith Coughenaur and then worked for Big Burrito restaurant group at Kaya and Soba, Bigelow Grill, Red Room Cafe and consulting chef for Nine on Nine restaurant before undertaking his own venture, Salt of the Earth. Sousa and team opened Union Pig and Chicken as well as Station Street Hot Dogs in the East Liberty neighborhood of Pittsburgh. Sousa was voted a Rising Star chef in 2004 by the Pittsburgh Magazine. Ryan graduated from Pennsylvania Culinary Institute Le Cordon Bleu and has been working in restaurants all throughout Pennsylvania. Ryan was recently awarded the Savor Pittsburgh Best Appetizer 2018 award and diligently working towards the opening of T&T Cantina this spring. You’ve seen his work previously at Easy Street, and Bravo Cucina. Originally from Central Pa, Ryan now resides in Butler, Pa with his Wife and Two Daughters
Tim started his career in 1987 working at a retail Meat market located in Toledo Ohio, during his six years of employment with the market his mentor taught him exceptional customer service skills and the art of process Swinging Beef. Tim learned the value of hard work quickly and had a willingness to take on new responsibilities that has led to his long-term career in meat. Tim became exposed to the wholesale meat industry in 1994 when he started working for Malcolm Meats (now Buckhead Meat and Seafood) located in Northwood Ohio, working 6 years as a skilled Meat Cutter, 10 years as Production Manager and 7 years as Director of Production. As part of the Sysco family, Tim prides himself on ensuring our customers receive the highest level of quality in products and service. He enjoys spending time with customers, finding ways to partner with them and introducing protein options that fit their demographics.
Jones studied under certified Master Chef Edward Janos for eight years, learning classical French cuisine and techniques. He was certified as an Executive Chef in December 1999. Since his certification, he was won several medals from the American Culinary Federation culinary salons in Michigan, Ohio, Illinois, and Colorado including the grand prize in the Clos Du Bois Wine and Food Pairing Competition. After graduating from Pittsburgh’s Le Cordon Bleu Institute of Culinary Arts Patrick moved to Asheville NC where he worked at the world renowned Biltmore and later for the seven-times James Beard Nominated Chef, Katie Button. Patrick returned to Pittsburgh in 2014 to open Sewickley’s Mambo Italia and then Bruneaux in 2016. He came to the DoubleTree in August 2018 where he over sees the operations of Ember & Vine, the hotel’s in house restaurant, and all banquet events.
In January 2012, fresh off of retirement from their corporate day-jobs, Justin and his three best friends opened Bar Marco in the historic Strip District Neighborhood of Pittsburgh, PA. During his travels through Italy in college, coupled with six-hour lunches in the courtyard of Marco Enrico, (the restaurant’s namesake) Justin’s affinity for all things Italian was born. Justin and the kitchen staff at Bar Marco take inspiration from seasonal produce and local purveyors to create changing menus that accompany the restaurant’s thoughtful wine and cocktail programs. Since opening, Bar Marco has received many local and national accolades, including being named one of Bon Appetit’s Top 50 Best New Restaurants in 2013 and a semifinalist for Outstanding Wine Program by the James Beard Foundation in 2019.
